So I had a cooking alacrity and it was almost dinner time. So, I decided to give my weary mother a break and try something on my own.
I love the white and round protein-treasury called egg! It's just something you can customise so well and so quick! I googled some egg recipes and came across the Martha Stewart Webpage and tried to do the Tortilla.

But, me being myself, I couldn't really follow a recipe with customisations....and in this case I changed the entire recipe!
So here's my version of it:

So here's my version of it:
Duration: 30 minutes
Serves: 2/3
Ingredients:
Olive Oil
One Potato
Egg/s
Half a Bell Pepper
One green chilly
One Medium Onion
Coriander
Tomato Ketchup
Garlic Chilly Sauce
Freshly grounded pepper
Salt
2 Medium Saucepans
Steps:
1. Chop your Veggies as so:
Potato Circular slices
Finely chopped Coriander
Onion Circles
Long stripes of bell pepper
Tomato Puree
Finely chopped Chilli
2. Use One saucepan to add 2/3 Tbsp of olive oil at medium flame. Use the Second Saucepan and add enough oil to submerge your Potato Slices.
3. Once the oil in both pans is heated enough add : Onion, Bell pepper and Chilli in the first pan. Slowly put Potato Slices in the other pan.
4. Let the onions turn golden brown white the Potatoes fry to be golden too and then remove the Potatoes and add them to the first Saucepan.
5. Add the Tomato Ketchup and then Garlic Chilli Sauce. Then add the pepper and the salt to taste.
Mix it all well enough.
6. Crack 1/2/3 eggs over this mixture. Do not disturb the setting just make sure the egg white seeps thru the veggies to form an omelette.
7. Flip this omelette carefully and add sprinkles of the coriander. Lid the Saucepan to let the omelette cook properly.
8. Make some Toast of Pocket Pita Bread to accompany the Omelette
Optional: Grate some cheese over it.
Whatever I made tasted delicious! I ate it as an open sandwich with brown toasted bread.
